Put the lime in the coconut...
So today is another scorcher and I just discovered my new favourite EVER drink. Frozen Coconut Limeade. This is seriously refreshing and the best thing on a hot day like today. I've added the recipe below, it's super simple and delicious.
Frozen Coconut Limeade - Makes enough for 4 hot, thirsty people or 6 terribly polite, restrained people... (I don't know any of the latter)
Ingredients
- 5 - 6 limes (depending on size/juiciness)
- 1 tin of Organic Coconut Milk (the kind you use for a Thai curry not the Alpro carton stuff)
- Ice cubes/crushed ice 3 / 4 good handfuls
- 3 tbsps Coconut Blossom Syrup (If you have it, if not then Honey, or you can just use sugar)
Method
Juice the limes and then add all the ingredients to a blender, and blitz, taste and then add more Syrup/Honey/Sugar to taste. I don't like mine too sweet, so you may want to add more than I used.
Drink and then decide if you need another glass with some rum in it as well. I'm definitely going for the rum option too.
